Preparation: 

Tea Tree Mushroom Chicken Soup

  1. Soak and wash 100G tea tree mushrooms, trim roots, and soak in water. Prepare onions, ginger, and wash whole chicken.
  2. Bring the chicken to a boil together with cold water.
  3. Add onions, ginger, two tablespoons cooking wine, soaked tea tree mushrooms, and the soaking water. Simmer for 1.5 hours on low heat.
  4. Bring the chicken to a boil together with cold water.

Tea tree mushroom and pork rib casserole

  1. Soak cleaned 50G tea tree mushrooms in warm water until soft (keep the soaking water). Wash 250G pork ribs.
  2. Marinate the pork ribs with 5g dark soy sauce, 15g white sugar, 10ml light soy sauce, 2 tsp cooking wine, 10g spring onions, and 10g ginger for 30 minutes.
  3. Heat oil in a pan and stir-fry the pork ribs until they release oil. Turn off the heat.
  4. Cut tea tree mushrooms and place them in a clay pot with the soaking water. Add pork ribs, salt, and simmer until cooked.
