Chinese Yam and Shiitake Mushroom Stir-Fry  - 山药烩香菇

Quick and easy-to-cook 山药烩香菇 (Shan Yao Hui Xiang Gu) is a delicious healthy vegetarian side dish that can be enjoyed with your whole family! The veggies are also packed with beneficial nutrients:

  • Shiitake Mushrooms help strengthen the immune system. 增强免疫力
  • Black Fungus promotes blood circulation and helps reduce blood fat. 促进血液循环并帮助减少血脂

Ingredients: (Recommended weight/unit, can be adjusted according to your tastes/liking!)
Shiitake Mushrooms – 3 Pieces
Carrot – x1 
Chinese Yam – x1
Chives –  One bunch
Ginger – x1
Garlic – 2 cloves
Oil – 2 tablespoons
Black Fungus - 8g
Red Dates - 6 pcs
Soy sauce – 1 teaspoon
Oyster sauce – 2 teaspoons
Sugar – 1.5 teaspoons 
Pepper – 1 teaspoon
Chili flakes – 0.5 teaspoon

Yield: persons 

Preparation Time: - ½ hour

Cooking Time: 20 - 30 minutes. Cook longer if you enjoy a softer texture

Directions:

Step 1. Pre-soak the dried shiitake mushrooms and slice the mushrooms into strips. Trim off the top of the carrot and peel off the carrot skin. Cut the carrot to about 4 fingers wide and then cut into half. Half the carrot again into smaller pieces then slice the carrot into thin strips. 

Step 2. Peel off the skin of the Chinese Yam. Remove both ends of the Chinese Yam and cut it into slices. Soak the sliced yams in water to avoid oxidation. Next, cut away the stems of the chives and cut the chives into 2-inch pieces. 

Step 3. Slice off the ginger skin and cut the ginger into thin slices. Trim off the stem end from the garlic cloves. Smash the cloves with the side of your knife and chop garlic into finely chopped pieces.

Step 4. Heat up the pan and add 2 tablespoons of oil. Add in the chopped garlic and sliced ginger and stir-fry until they start to turn golden-brown. Add in the sliced Chinese Yams and continue to stir-fry. Next, add in the sliced carrot strips, sliced mushroom strips, black fungus, red dates and chives. Continue to stir-fry. Then, add in 1 teaspoon of soy sauce, 2 teaspoons of oyster sauce, 1.5 teaspoons of sugar, and 2 teaspoons of water. Mix well and stir-fry for 10 minutes. Lastly, add in 1 teaspoon of pepper and 0.5 teaspoon of chili flakes.
 

Step 5. Continue to stir-fry and once the Chinese Yam turns soft and golden-brown, it is ready to serve!
