Fish Head – x1
Oil – 4 tablespoons
Ginger Slices – 6 pieces
Hua Diao Wine – 2 tablespoons

Yield: 2-3 persons

Preparation Time: 30 minutes for soaking the herbs

Cooking Time: 2 hours


Step 1. Chop the fish head into smaller pieces. 

Step 2.  Rinse and soak the herbs in a bowl of water for at least 30 minutes. [Tips: Cut the codonopsis into small pieces and red dates in half will allow the flavors to come through stronger!] 

Step 3. Next, place the soaked herbs into the soup pot with 1.6 Liters of water and bring it to a boil. 

Step 4. Heat up a pan and add 4 tablespoons of oil. Once the oil is heated, add in the ginger slices and stir-fry until you smell the ginger. Then, add in the chopped fish head pieces and stir-fry until all the surfaces are cooked. 

Step 5. When the soup comes to a boil, add in the lightly pan-fried fish head pieces. Mix well and continue to boil and simmer the soup for another 2 hours. 

Step 6. Finally, add in 2 tablespoons of Hua Diao Wine and wolfberries during the last 5 - 10 minutes and the soup is done and ready to be served!
