Sai Hing Black-eyed Bean
The black-eyed pea or black-eyed bean is a legume grown worldwide for its medium-sized, edible bean.
It is a subspecies of the cowpea, an Old World plant domesticated in Africa, and is sometimes called a cowpea.

Preparation:
Black-eye pea Mushroom Chicken feet Soup:
- Wash 40G Black-eye beans, 3-4 shiitake mushrooms, and 30G peanuts for 1 hour, Drain. Cut 6 piece red dates in half.
- Trim 10 chicken feet, blanch until cooked, and wash thoroughly. Set aside.
- Put all ingredients in pot with 1.5mL water and some cooking wine. Simmer for 1-1.5 hours.Add wolfberries and a pinch of salt for seasoning.
Storage Method:
It is recommended to store in a refrigerator at a temperature of 4 degrees Celsius. Avoid storing too much food in the refrigerator to ensure effective cooling.
