Vegetarian Pumpkin Rice - 素食南瓜饭

素食南瓜饭 (Su Shi Nan Gua Fan) is not only good for the joints but is also easy and quick to cook. Made with dry mushrooms and pumpkin, you can share this recipe with the whole family and enjoy its appetizing flavor.

Ingredients: (Recommended weight/unit can be adjusted according to your tastes/liking!)
Pumpkin – Half 
Dried Mushrooms – 5 Pieces
Shallots – x3 
Garlic – 3 Cloves
Cooking Oil -  2 teaspoons
Vegetarian Dried Shrimps - One rice bowl
Rice - 2 cups
Sesame Oil – 2 teaspoons
Oyster Sauce – 2 tablespoons
Five-spice powder - 1 tablespoon
Salt - 1 teaspoon
Pepper - 1 teaspoon

Yield: 4 pax

Preparation Time: - cutting ingredients 20ms, soak mushroom 20ms

Cooking Time: frying 5 mins after which, as per your rice cooker setting

Directions:

Step 1. Remove the pumpkin seeds and dice them pumpkin into bite-sized pieces. Keep the diced pumpkin in a bowl for later. Soak the dried mushrooms beforehand and slice the mushrooms. Place the sliced mushrooms on a plate for later.

Step 2. Peel away the skin and slice the shallots and garlic, then chop them into smaller pieces. Place the chopped shallots and garlic on a plate. 

Step 3. Heat the pan and add two teaspoons of cooking oil. Add in the chopped garlic and shallots and stir-fry until golden brown. Next, add in the vegetarian dried shrimps and stir-fry for about 10 minutes. Add in the sliced mushroom and continue to stir-fry. Then, add in the rice and 2 teaspoons of sesame oil and continue to stir-fry and mix well. Add in the diced pumpkin, continue to stir-fry and mix the ingredients. Lastly, add 2 tablespoons of oyster sauce, five-spice powder, salt, and pepper. Continue to stir-fry until evenly coated.

Step 4. Transfer the mixture into the rice cooker and add in 3 cups of water; then proceed to cook the rice. Finally, the Pumpkin Rice is all done!
