Sweet Potato Snow Fungus Soup - 紫红薯银耳汤
紫红薯银耳汤 (Zi Hong Shu Yin Er Tang) helps our body perform at its best by returning the body to a balanced state between Ying (Cooling) and Yang (Heaty).

Ingredients: (Recommended weight/unit, can be adjusted according to your tastes/liking!)
Snow Fungus – 3-4 pieces
Purple Sweet Potato – x1
Orange Sweet Potato – x1
Rock Sugar (amount based on your own preference)
Pandan Leaves (amount based on your own preference)
Yield: 2-3 persons
Preparation Time: 15 minutes for steaming the sweet potatoes and soaking the snow fungus
Cooking Time: 30 - 45 minutes
Directions:
Step 1. Soak the snow fungus in the water for a few minutes until it is softened. Next, peel off the skin of the purple and orange sweet potatoes and cut them into cubes. Then, add the cubed sweet potatoes into the steamer and let it steam for 15 minutes. Once done, put aside the steamed sweet potatoes.
Step 2. Boil 2 Liters of water in a pot and when the water comes to a boil, add rock sugar, snow fungus, and pandan leaves into the pot. Stir well and simmer for 30 - 45 minutes. [Tips: Cook longer if you prefer a thicker consistency]
Step 3: Add the steamed sweet potatoes and the dessert is ready to be served!
