Frozen Yogurt Barks - 冰冻酸奶片

A delicious and healthy dessert, 冰冻酸奶片 (Bing Dong Suan Nai Pian) is super simple to make and the perfect recipe to involve your kids in. Not only does it have a rich flavor and is insta-worthy, on top of that our ingredients used are full of health benefits such as:

  • Walnuts are good for your brain. 核桃补脑
  • Goji and Blueberries are good for your eyes. 枸杞和蓝莓补眼睛
  • Red dates help reduce stress. 红枣有助于减轻压力

Ingredients:
(Recommended weight/unit, can be adjusted according to your tastes/liking!)

Orange – x1
Cashew Nuts – 30g
Walnuts – 30g
Red Dates – 4-5 Pieces
Blueberries – 60g 
Goji Berry – 20g 
Greek Yogurt – 500g 
Baking Soda – 1 teaspoon 
Honey (Amount based on your own preference)


Yield: 4 - 6 people (Great for parties and gatherings, store them in a container after breaking for a healthy snack on the go)


Preparation Time: 10 minutes
Cooking Time: : 2-3 hours


Directions:


Step 1. Wash and soak the blueberries in a bowl with 1 teaspoon of baking soda and water for a few minutes. Then, rinse with clean water after soaking. Wash the red dates thoroughly and dry them with a kitchen towel. Remove the core by cutting around the seed, roll them up slightly, and cut crosswise. 


Step 2. Chop the walnuts into smaller pieces. Slice the top part off from the orange and peel the skin off [Tips: Slice around the sides to make scorings for easy peeling then use the knife to make an opening]. Use about 6-8 orange slices. Cut the central column part away then, slice the pith off, and lastly, remove the carpel skin from the orange pulp. 

Step 3. Prepare the tray with parchment paper and pour in 500g of plain yogurt. Spread out as evenly as possible and make sure to cover the corners as well. Next, assemble all the ingredients on the yogurt layer [Tips: Make sure the toppings are in contact with the yogurt so that they won’t fall off after freezing].

Step 4. Place in the freezer for at least 2-3 hours for it to set. After 2-3 hours, release the yogurt bark from the parchment paper. Break it with your hands or use a knife if you prefer. Finally, drizzle with honey on top and serve this luscious dessert to your family!
